SPICY TOMATO BAKED EGGS

INGREDIENTS 
  • 1 tbs oil
  • 2 red onions chopped
  • 1 red bell pepper or capsicum 
  • 1 red chilli deseeded finely chopped
  • 1 tbs parsley finely chopped
  • 1 garlic clove crushed
  • 250 g  of cherry tomato  or tomatoes roughly chopped 
  • 1 tbs chilly powder
  • 4 eggs

  •     For Two people

PREPERATION 

  • Heat oil in a large fry-pan and cook onion, chilli and garlic until onion softens.
  • Stir in tomatoes and chilly powder, and leave to simmer for 10 minutes or until soft
  • Make four small holes and crack eggs into the mixture . 
  • Cover and cook for 6 minutes

  • Preheat the oven to 200℃ and bake in the oven until the eggs are set for around 4 - 8 minutes. 
  • Sprinkle with parsley and serve hot
