SPICY TOMATO BAKED EGGS

INGREDIENTS
- 1 tbs oil
- 2 red onions chopped
- 1 red bell pepper or capsicum
- 1 red chilli deseeded finely chopped
- 1 tbs parsley finely chopped
- 1 garlic clove crushed
- 250 g of cherry tomato or tomatoes roughly chopped
- 1 tbs chilly powder
- 4 eggs

PREPERATION
- Heat oil in a large fry-pan and cook onion, chilli and garlic until onion softens.
- Stir in tomatoes and chilly powder, and leave to simmer for 10 minutes or until soft
- Make four small holes and crack eggs into the mixture .
- Cover and cook for 6 minutes
- or
- Preheat the oven to 200℃ and bake in the oven until the eggs are set for around 4 - 8 minutes.
- Sprinkle with parsley and serve hot
