EDGY VEGGIE WRAPS

       INGREDIENTS

  1. 1/2 teaspoon olive oil
  2. 1-inch slice red onion
  3. 1/2 medium red bell pepper
  4. 1/2 small zucchini
  5. 1/2 cup carrot, and beans
  6. 1 medium-sized potato
  7. 2 whole-grain wraps or tortillas
  8. 1/4 cup hummus
  9. 1/2 cup baby spinach
  10. 2 tablespoon feta cheese, crumbled(optional)
  11. 1 teaspoon dried oregano
  12. 1 tablespoon sliced black olives

PREPARATION

  • Thinly slice the red onion, bell pepper, zucchini, carrot and beans. Boil and mash the potatoes and keep it aside( if you don't want the potatoes, just skip it)

  • In a pan, heat oil over medium-low heat. Add the veggies and saute them, until soft, for about 5 minutes.
  • In a separate pan, heat the wraps.
  • Spread half of the hummus down the middle of each wrap. Divide spinach between wraps, then top them with sauteed vegetables. Sprinkle with feta, oregano, and olives.
  • Fold edges over to roll up, and cut in half crosswise
And your healthy Edgy Veggie Wraps are ready. It is really healthy and yummy so that you can eat it guilt-free.
